When you think about your favorite breakfast places, there are a few dishes that pop into mind. Chances are, when you think of the most important meal of the day, you think of eggs, bacon, and probably pancakes or some version of toast. But, what about the good old fashioned eggs beni? Two poached eggs placed atop canadian bacon on a warm english
muffin, smothered with hollandaise sauce – our mouths are watering just thinking about it. Of course, this is one of many
variations of this long-time favorite. Here at Classic Kitchen Cafe, we love a good benedict for breakfast just as much as the next person. With this in mind, we’re dedicating this article to – you guessed – Eggs Beni.
History in the making.
For as long as the human race has been alive, breakfast has been around in one form or the other. However, many classic creations, like eggs benedict, come with a bit of a story. This tale takes us all the way back to the 1860s when a couple, Mr. and Mrs. LeGrand Benedict, were tired of the same old offerings. The story goes, the couple entered their favorite breakfast restaurant, Delmonico’s, and asked chef Charles Ranhofer to create something new. His recipe, which was later published in his cookbook in 1894, was called Eggs a la Benedict.
Or, did it go something like this?
Of course, with most historical tales around cuisine creations, there is always more than one story. Here, it is said that a gentleman by the name of Lemuel Benedict entered the Waldorf Hotel in Manhattan one morning after a night of drinking. Ordering a concoction close to what we know as eggs benedict, the recipe was later added to the menu by the chef who recognized the tasty potential. Ironically enough, the chef, Tschirsky, was a former employee of Delmonico’s Restaurant.
Which is true? Who knows! We’re just happy this breakfast offering came to be!
Variety is the spice of life!
While millions of people enjoy a traditional eggs beni, it’s not for everyone. That’s why our family is cooking up the Florentine Benedict as well! Skip the meat, add some spinach and tomato in its place and viola! A vegetarian option that packs a punch and satisfies with every bite.
